Extra virgin olive oil is made simply by crushing olives and extracting the juice. Nothing else is required – no chemicals, no additives, no refining. We have 200 olive trees at Montecalvi, perched high above the Le Terrazze vineyard. Nobody knows when they were first planted but it seems that they have been there since the beginning of time.
We have three traditional Tuscan varieties: correggiolo, frantoio, moraiolo. We handpick the olives in November / December and press them in Greve in Chianti. We produce tiny quantities of fine, fresh extra virgin olive oil. Like our wine, it is a true expression of time and place.
